Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper to prevent sticking.
- Whisk together the flour, baking soda, and salt in a medium bowl.
- Cream the softened butter and granulated sugar in a large bowl until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the fresh lemon juice, lemon zest, and optional lemon extract.
- Gradually mix the dry ingredients into the butter mixture on low speed, taking care not to overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 9-11 minutes until the edges are lightly golden and the centers remain soft.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack.
- Prepare the glaze by whisking together the powdered sugar and fresh lemon juice until smooth.
- Drizzle the cooled cookies with the lemon glaze and let it set before serving.
