Description
Moist and flavorful zucchini bread made with fresh grated zucchini, warm spices, and a hint of vanilla perfect for breakfast, snacks, or gifting.
Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 large eggs
1 cup granulated sugar
1/2 cup vegetable oil
1 tsp vanilla extract
2 cups grated zucchini (about 2 medium)
Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a large bowl, beat eggs, sugar, oil, and vanilla until well combined.
4. Stir in grated zucchini.
5. Gradually add dry ingredients to wet ingredients, stirring gently until just combined.
6. If using, fold in walnuts or chocolate chips.
7. Pour batter into the prepared loaf pan and smooth the top.
8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
10. Slice and serve, or wrap tightly for storage.
Notes
For extra moisture, don’t squeeze the liquid out of the zucchini.
Zucchini bread can be frozen for up to 3 months wrap tightly in plastic and foil.
Great with a spread of cream cheese or butter.
