- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup raspberry jam
- 1/2 cup rolled oats
- 1/2 cup brown sugar
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, mixing until just combined.
- Stir in the rolled oats and brown sugar.
- On the prepared baking sheet, drop spoonfuls of dough and flatten slightly. Make a small well in the center of each cookie and fill with raspberry jam.
- Bake for 10-12 minutes or until the edges are golden brown. Allow to cool before serving.
Notes
