Description

A quick and delicious fried rice dish combining chicken and bacon with mixed vegetables.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup cooked bacon, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce
  • 2 eggs, beaten
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add the mixed vegetables and stir-fry until tender.
  3. Push the veggies to one side and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked.
  4. Add the chicken and bacon to the skillet and stir to combine.
  5. Add the cooked rice to the skillet, breaking up any clumps.
  6. Pour in the soy sauce, and mix everything together.
  7. Stir in the green onions and season with salt and pepper.
  8. Cook for another 2-3 minutes until everything is heated through. Serve hot.

Notes

Ensure your rice is cold for best results; day-old rice works great. You can adjust the soy sauce to taste if you prefer a saltier flavor.
