Description
A quick and delicious fried rice dish combining chicken and bacon with mixed vegetables.
Ingredients

- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1 cup cooked bacon, chopped
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 tablespoons soy sauce
- 2 eggs, beaten
- 2 green onions, sliced
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet or wok over medium heat.
- Add the mixed vegetables and stir-fry until tender.
- Push the veggies to one side and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked.
- Add the chicken and bacon to the skillet and stir to combine.
- Add the cooked rice to the skillet, breaking up any clumps.
- Pour in the soy sauce, and mix everything together.
- Stir in the green onions and season with salt and pepper.
- Cook for another 2-3 minutes until everything is heated through. Serve hot.
Notes
Ensure your rice is cold for best results; day-old rice works great. You can adjust the soy sauce to taste if you prefer a saltier flavor.
