- 1 cup long-grain rice
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup fresh vegetables (carrots and peas)
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- Gather all ingredients on a clean countertop.
- Place chicken breasts in the crockpot; season generously with salt and pepper.
- Layer uncooked rice over the chicken and add chopped fresh vegetables.
- In a bowl, mix chicken broth and cream of chicken soup until smooth, then pour over the mixture in the crockpot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix it back into the rice.
Notes
For extra flavor, add herbs like thyme or parsley. You can use frozen vegetables for convenience. For creaminess, add more cream of chicken soup.
