Description

A simple and flavorful slow-cooked chicken lo mein that’s perfect for weeknight dinners.


Ingredients

  • 1 lb chicken breast, sliced
  • 8 oz lo mein noodles
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 green onions, sliced

Instructions

  1. In a slow cooker, combine the sliced chicken, mixed vegetables, garlic, and ginger.
  2. In a separate bowl, mix the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the chicken and veggies.
  3. Cook on low for 360-420 minutes or high for 180-240 minutes.
  4. About 30 minutes before serving, cook the lo mein noodles according to package instructions. Drain and add them to the slow cooker. Toss everything together.
  5. Serve garnished with sliced green onions.

Notes

For added flavor, let the sauce sit for a few minutes before pouring it over the chicken. You can add more vegetables or use frozen ones for convenience.
