Ingredients
2 large chicken breasts
2 cans white beans, drained
4 cups chicken broth
1 can green chilies
3 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
4 ounces cream cheese
1 cup shredded cheese
Fresh cilantro for garnish
Instructions
1. Place chicken breasts, beans, broth, green chilies, garlic, and spices into the crockpot.
2. Cover and cook on low for 6 hours or high for 3 hours.
3. Remove the chicken, shred it, then return to the crockpot.
4. Stir in cream cheese until melted and creamy.
5. Serve hot topped with shredded cheese and cilantro.
Notes
This crockpot recipe can be made ahead and stored in the refrigerator for up to three days.
Add jalapeños for more heat or reduce spices for a milder flavor.
