Description

Crispy on the outside and soft on the inside, falafel is a flavorful vegetarian treat made from chickpeas and fresh herbs.


Ingredients

Scale
  • 1 cup dried chickpeas (soaked overnight)
  • 1 cup fresh parsley (packed)
  • 1/2 cup fresh cilantro (packed)
  • 23 garlic cloves
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ยฝ tsp baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Soak chickpeas overnight in water and rinse them before use.
  2. In a food processor, combine the drained chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, and pepper. Pulse until the mixture is coarse.
  3. Transfer the mixture to a bowl and gently mix in baking powder.
  4. Form the mixture into golf ball-sized balls or patties.
  5. Heat vegetable oil in a deep pan over medium-high heat until shimmering.
  6. Fry falafel in batches for 3-4 minutes until golden brown on all sides; drain on paper towels.

Notes

Make sure to soak the chickpeas well for a better texture. Donโ€™t over-process the mixture; it should be coarse, not smooth.
