Description
Crispy on the outside and soft on the inside, falafel is a flavorful vegetarian treat made from chickpeas and fresh herbs.
Ingredients

- 1 cup dried chickpeas (soaked overnight)
- 1 cup fresh parsley (packed)
- 1/2 cup fresh cilantro (packed)
- 2–3 garlic cloves
- 1 tsp cumin powder
- 1 tsp coriander powder
- ยฝ tsp baking powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Soak chickpeas overnight in water and rinse them before use.
- In a food processor, combine the drained chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, and pepper. Pulse until the mixture is coarse.
- Transfer the mixture to a bowl and gently mix in baking powder.
- Form the mixture into golf ball-sized balls or patties.
- Heat vegetable oil in a deep pan over medium-high heat until shimmering.
- Fry falafel in batches for 3-4 minutes until golden brown on all sides; drain on paper towels.
Notes
Make sure to soak the chickpeas well for a better texture. Donโt over-process the mixture; it should be coarse, not smooth.
