Instructions
- In a large pot, sauté the chopped onion and minced garlic until fragrant.
- Add the diced sweet potatoes, curry powder, and ground ginger, stirring to coat.
- Pour in the vegetable broth, bringing to a boil.
- Reduce heat and simmer until the sweet potatoes are tender, about 15-20 minutes.
- Stir in the coconut milk and season with salt and pepper.
- Blend the soup until smooth, adding more broth if necessary for desired consistency.
- Serve hot, garnished with fresh cilantro.
Notes
Use fresh spices for a stronger flavor. Adjust the amount of curry powder based on your taste preference. If the soup is too thick, add more vegetable broth.
