Description

A delightful dessert that captures the essence of autumn with soft, spongy cake filled with creamy pumpkin spice filling.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 tsp pumpkin pie spice blend
  • 1/4 tsp salt
  • 3 large eggs
  • 11/4 cups granulated sugar
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar, for dusting towel
  • 8 oz cream cheese, at room temperature
  • 1/4 cup salted butter, softened
  • 1 tsp vanilla extract
  • 1/8 tsp ground cinnamon
  • Pinch sea salt
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 15×10-inch jelly roll pan and line with parchment paper.
  2. Mix flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt in a bowl and set aside.
  3. In another bowl, beat eggs and sugar together until light and fluffy, about 5 minutes.
  4. Add pumpkin puree and vanilla extract to the egg mixture and mix well.
  5. Gradually add the flour mixture to the pumpkin mixture, stirring gently until well combined.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 13-15 minutes until set and a toothpick comes out clean.
  8. Prepare a clean towel dusted with powdered sugar.
  9. Turn the baked cake onto the towel and peel off the parchment paper.
  10. Roll the cake in the towel starting from a short end and let cool completely.
  11. Prepare the filling by beating cream cheese, butter, vanilla extract, ground cinnamon, and sea salt until smooth.
  12. Gradually add powdered sugar and beat until creamy.
  13. Once the cake is cool, unroll and spread filling evenly.
  14. Roll the cake back up, seam-side down, and chill for 1 hour.
  15. Dust with additional powdered sugar before slicing and serving.

Notes

Best served chilled. Can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
