A delightful twist on the classic French dip sandwich, featuring tender roast beef, gooey provolone cheese, and crunchy fried onions, all wrapped in a soft tortilla.

- 4 large flour tortillas, about 12 inches in diameter
- 8 slices provolone cheese, thinly sliced
- 12 ounces deli roast beef, freshly sliced
- 1 cup French fried onions, store-bought or homemade
- 2 tablespoons extra virgin olive oil
- 1 can (10.5 ounces) beef consommé
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper.
- Lay one tortilla flat on a clean surface and place two slices of provolone cheese on half of the tortilla, followed by three ounces of roast beef and a handful of French fried onions.
- Lightly brush the inside edge of the tortilla with olive oil to help it seal, then roll up the tortilla tightly from the filled end.
- Press the oiled edge to seal and place it seam-side down on the prepared baking sheet. Repeat with remaining tortillas.
- Brush the tops and sides of the roll-ups with the remaining olive oil.
- Bake for 8-10 minutes until tortillas are golden brown and cheese is bubbling.
- While the roll-ups bake, prepare the dipping sauce: combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan and heat over medium until hot and fragrant.
- Let roll-ups rest for 2 minutes before slicing them into halves or thirds.
- Serve with warm au jus for dipping.
Notes
For a crunchy texture, bake slightly longer, and always serve the au jus warm for the best dipping experience. Customize fillings as desired.
