Description

A colorful and flavorful salad featuring sweet roasted beets and carrots topped with creamy burrata cheese, perfect for a light meal.


Ingredients

  • 2 large beets, roasted and diced
  • 3 large carrots, roasted and sliced
  • 8 oz burrata cheese
  • 4 cups mixed greens (arugula, spinach, etc.)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • Fresh herbs (such as basil or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the beets and carrots, then place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
  3. Roast the beets for about 45 minutes and the carrots for about 30 minutes, or until tender.
  4. Let the vegetables cool slightly, then dice the beets and slice the carrots.
  5. In a large bowl, combine the mixed greens, roasted beets, and carrots. Drizzle with balsamic vinegar and olive oil, and toss gently.
  6. Plate the salad and top with torn burrata cheese.
  7. Garnish with fresh herbs and serve immediately.

Notes

Make sure to roast beets and carrots until they are fork-tender for the best texture. Let the veggies cool slightly before adding to the salad to keep greens fresh.
