- 1 package (16 oz) store-bought gnocchi
- 4 cups low-sodium vegetable broth
- 2 cups fresh spinach, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 3 cloves garlic, minced
- 1/2 cup Parmesan cheese, grated
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, warm the olive oil.
- Add diced carrots and celery; sauté until softened (about 5 minutes).
- Stir in minced garlic and Italian seasoning; cook for an additional minute until fragrant.
- Pour in the vegetable broth; bring to a gentle boil.
- Add the gnocchi and spinach; cook until the gnocchi floats to the surface (about 3-5 minutes).
- Stir in grated Parmesan cheese until melted and creamy. Season with salt and pepper as needed.
- Serve hot with extra cheese or fresh herbs on top.
Notes
Use fresh veggies for the best flavor. Feel free to add your favorite herbs for an extra kick. This soup can easily be doubled for larger servings.
