Description

These Greek Chicken Bowls are fresh, tasty, and healthy, full of Mediterranean flavors.


Ingredients

  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • Lemon wedges for serving

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. In a bowl, mix olive oil, garlic powder, onion powder, oregano, salt, and pepper.
  3. Coat the chicken breast with the mixture, then grill or cook on a skillet until no longer pink, about 6-7 minutes per side.
  4. Let the chicken rest before slicing it.
  5. In a bowl, assemble the quinoa or rice base, then top with the sliced chicken, cherry tomatoes, cucumber, feta cheese, red onion, and olives.
  6. Serve with lemon wedges on the side.

Notes

For added flavor, marinate the chicken for a few hours or overnight. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
