Ingredients

  • 4 salmon fillets
  • 2 limes (juiced)
  • 2 tablespoons olive oil
  • 1 ripe avocado (diced)
  • 1 ripe mango (diced)
  • 1/4 red onion (finely chopped)
  • 1/4 cup cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together lime juice, olive oil, salt, and pepper. Marinate the salmon fillets in this mixture for at least 30 minutes.
  2. While the salmon marinates, prepare the avocado-mango salsa by combining diced avocado, mango, red onion, cilantro, and a pinch of salt in a bowl. Mix gently and set aside.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated salmon for about 5-6 minutes on each side or until cooked through.
  5. Serve the grilled salmon topped with the avocado-mango salsa.

Notes
