Ingredients

  • 4 salmon fillets
  • 2 ripe mangoes, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, minced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush salmon fillets with olive oil and season with salt and pepper.
  3. Grill salmon for 4-5 minutes on each side, or until cooked through and flaky.
  4. In a bowl, combine diced mango, red onion, jalapeño, lime juice, cilantro, and a pinch of salt.
  5. Once salmon is cooked, top each fillet with mango salsa and serve immediately.

Notes

Make sure your grill is hot before adding the salmon for a nice sear. If you like it spicy, add more jalapeño to the salsa. Let the mango salsa sit for a few minutes before serving to enhance the flavors.
