- 4 salmon fillets
- 2 ripe mangoes, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, minced
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste

Instructions
- Preheat the grill to medium-high heat.
- Brush salmon fillets with olive oil and season with salt and pepper.
- Grill salmon for 4-5 minutes on each side, or until cooked through and flaky.
- In a bowl, combine diced mango, red onion, jalapeño, lime juice, cilantro, and a pinch of salt.
- Once salmon is cooked, top each fillet with mango salsa and serve immediately.
Notes
Make sure your grill is hot before adding the salmon for a nice sear. If you like it spicy, add more jalapeño to the salsa. Let the mango salsa sit for a few minutes before serving to enhance the flavors.
