- 1 cup diced pineapple
- 1 cup diced bell peppers (red and green)
- 1 cup diced carrots
- 1/2 cup peas
- 2 green onions, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Optional: cooked shrimp or chicken
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Toss in the diced bell peppers, carrots, and peas. Cook until vegetables are tender, about 5 minutes.
- Stir in the cooked rice and pineapple.
- Pour the soy sauce over the mixture and stir well to combine.
- Add optional cooked shrimp or chicken if using.
- Cook for another 3-5 minutes, stirring occasionally.
- Remove from heat and garnish with sliced green onions.
- Serve warm and enjoy your tropical dish!
Notes
Use day-old rice for better texture. Adjust the amount of soy sauce based on your salt preference.
