Ingredients

- 1 lb boneless, skinless chicken thighs or breasts
- 2 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup potatoes, cubed
- 1 cup green beans, trimmed and cut
- 1 cup peas
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until softened.
- Add chicken pieces to the pot and cook until browned.
- Stir in carrots, celery, potatoes, and green beans.
- Pour in the chicken broth, and add thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30-40 minutes, or until chicken is cooked through and vegetables are tender.
- Add peas towards the end of the cooking time.
- Adjust seasoning if necessary, then serve hot.
Notes
Use bone-in chicken for more flavor. Make it a day ahead for better taste as flavors develop.
