Description

A comforting and filling stew packed with tender chicken and hearty vegetables, perfect for chilly days.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup potatoes, cubed
  • 1 cup green beans, trimmed and cut
  • 1 cup peas
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until softened.
  2. Add chicken pieces to the pot and cook until browned.
  3. Stir in carrots, celery, potatoes, and green beans.
  4. Pour in the chicken broth, and add thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 30-40 minutes, or until chicken is cooked through and vegetables are tender.
  6. Add peas towards the end of the cooking time.
  7. Adjust seasoning if necessary, then serve hot.

Notes

Use bone-in chicken for more flavor. Make it a day ahead for better taste as flavors develop.
