Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 6 oz thick-cut bacon, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the halved Brussels sprouts with chopped bacon, olive oil, garlic powder, thyme, salt, and pepper. Toss until well-coated.
  3. Spread the mixture in a single layer on a baking sheet.
  4. Roast in the oven for 20-25 minutes, stirring halfway through, until golden brown and crispy.
  5. Remove from the oven and let cool slightly before serving.

Notes

For best results, use thick-cut bacon and don’t overcrowd the roasting pan.
