Ingredients

  • 2 cups cooked rice
  • 1 cup diced chicken
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Push the chicken to the side and scramble the eggs in the same pan.
  4. Add the mixed vegetables and cooked rice to the skillet.
  5. Pour soy sauce over the mixture and stir everything together.
