Description

Juicy and flavorful chicken meatballs, a healthier alternative to traditional meatballs, perfect for any meal.


Ingredients

  • 1 lb lean ground chicken
  • 1/2 cup plain breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, Italian seasoning, salt, pepper, and the egg. Mix gently until well combined.
  3. Roll the mixture into balls about 1–1.5 inches in diameter and place them on a parchment-lined baking sheet.
  4. Heat olive oil in a skillet over medium heat. Cook meatballs in batches until browned on all sides (approximately 5-7 minutes).
  5. Transfer the browned meatballs back to the baking sheet and bake for an additional 15-20 minutes or until they reach an internal temperature of 165°F (74°C).

Notes

For extra flavor, add chopped herbs like parsley or basil to the meatball mixture. Store leftover chicken meatballs in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze them for up to 3 months.
