- 1 lb lean ground chicken
- 1/2 cup plain breadcrumbs
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp extra virgin olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, Italian seasoning, salt, pepper, and the egg. Mix gently until well combined.
- Roll the mixture into balls about 1–1.5 inches in diameter and place them on a parchment-lined baking sheet.
- Heat olive oil in a skillet over medium heat. Cook meatballs in batches until browned on all sides (approximately 5-7 minutes).
- Transfer the browned meatballs back to the baking sheet and bake for an additional 15-20 minutes or until they reach an internal temperature of 165°F (74°C).
Notes
For extra flavor, add chopped herbs like parsley or basil to the meatball mixture. Store leftover chicken meatballs in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze them for up to 3 months.
