Description

A refreshing and easy-to-make Key Lime Poke Cake perfect for summer gatherings.


Ingredients

  • 1 box of yellow cake mix
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 3 large eggs
  • 1 (14 oz) can of sweetened condensed milk
  • 1/2 cup of Key lime juice
  • 2 cups of whipped topping
  • Lime zest for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the cake mix, water, oil, and eggs. Mix until smooth. Pour the batter into the prepared baking pan.
  3. Bake the cake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  4. Let the cake cool for about 10 minutes, then poke holes all over the top of the cake using a fork.
  5. In a separate bowl, mix together the sweetened condensed milk and Key lime juice until well combined. Pour this mixture over the poke holes in the cake, letting it soak in.
  6. Cover the cake with whipped topping and refrigerate for at least 4 hours or overnight to allow flavors to meld.
  7. Before serving, garnish with lime zest. Enjoy your tropical dessert!

Notes

For a stronger lime flavor, use more lime juice or add some lime zest to the batter. Chill overnight for the best flavor.
