A refreshing and easy-to-make Key Lime Poke Cake perfect for summer gatherings.

- 1 box of yellow cake mix
- 1 cup of water
- 1/3 cup of vegetable oil
- 3 large eggs
- 1 (14 oz) can of sweetened condensed milk
- 1/2 cup of Key lime juice
- 2 cups of whipped topping
- Lime zest for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the cake mix, water, oil, and eggs. Mix until smooth. Pour the batter into the prepared baking pan.
- Bake the cake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool for about 10 minutes, then poke holes all over the top of the cake using a fork.
- In a separate bowl, mix together the sweetened condensed milk and Key lime juice until well combined. Pour this mixture over the poke holes in the cake, letting it soak in.
- Cover the cake with whipped topping and refrigerate for at least 4 hours or overnight to allow flavors to meld.
- Before serving, garnish with lime zest. Enjoy your tropical dessert!
Notes
For a stronger lime flavor, use more lime juice or add some lime zest to the batter. Chill overnight for the best flavor.
