Description

A delightful combination of seasoned ground beef, fresh vegetables, and rice topped with a sunny-side-up egg for a comforting and invigorating meal.


Ingredients

  • 1 lb lean ground beef
  • 2 cups short-grain white rice (cooked)
  • 1 cup carrots (julienned)
  • 1 cup spinach (fresh)
  • 1 cup zucchini (sliced)
  • 1 cup bean sprouts
  • 3 tbsp gochujang sauce (adjust for spice level)
  • 1 tbsp sesame oil
  • 2 tbsp low-sodium soy sauce
  • 4 eggs

Instructions

  1. Cook the rice according to package instructions; set aside.
  2. In a skillet, brown the ground beef over medium-high heat for about 5-7 minutes, draining excess fat.
  3. Stir in the gochujang, soy sauce, and sesame oil; allow to simmer on low for another 5 minutes.
  4. In a separate pan, sauté the vegetables in sesame oil over medium heat until they are tender-crisp, about 7 minutes.
  5. Fry the eggs sunny-side up in a non-stick skillet until the whites are set but yolks remain runny, about 3 minutes.
  6. Assemble the bowls by layering the rice, beef mixture, sautéed vegetables, and topping with the fried egg.
