Description

Ingredients

  • 8 oz pasta (any type)
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic; sauté until soft.
  2. Add the diced tomatoes (with their juices) and bring to a simmer.
  3. Stir in the pasta and cover with enough water or broth to cook the pasta.
  4. Cook according to the pasta package instructions, stirring occasionally.
  5. Once the pasta is al dente, stir in the heavy cream and Parmesan cheese. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh basil.
