- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 can (20 oz) pineapple slices in juice
- Maraschino cherries
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a Bundt pan.
- In a small saucepan, melt the butter and stir in the brown sugar until dissolved. Pour the mixture into the bottom of the prepared Bundt pan.
- Arrange the pineapple slices over the sugar mixture and place a cherry in the center of each slice.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
- In another bowl, combine eggs, oil, vanilla extract, and buttermilk.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter over the pineapple in the Bundt pan.
- Bake for 45-50 minutes or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting onto a plate.
- Serve and enjoy!
Notes
For extra flavor, add a pinch of cinnamon to the batter. Ensure even distribution of the butter and sugar mixture for a great caramel topping.
