- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tablespoon ube extract
- 1 teaspoon baking powder

- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, ube extract, and vanilla extract, mixing well to combine.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized portions of dough and roll them in powdered sugar until fully coated.
- Place the cookie balls on the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes, or until the edges are set and the tops are crackled.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Make sure your butter is softened to room temperature for easy mixing. Don’t skip the chilling step; it helps the cookies keep their shape.
