- 3–4 boneless, skinless chicken breasts (about 1.5 lbs), diced
- 2 cloves fresh garlic, minced
- 2 cups mixed vegetables (fresh or frozen)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 tsp dried thyme
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs (plain or seasoned)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and mixed vegetables for 5-7 minutes until softened.
- In a mixing bowl, combine cream of chicken soup, chicken broth, garlic, thyme, salt, and pepper. Mix until smooth.
- Add the sautéed vegetables and diced chicken to the creamy mixture; stir to coat thoroughly.
- Transfer the mixture into the prepared baking dish, spreading it evenly. Top with shredded cheddar cheese and breadcrumbs.
- Bake for 30-35 minutes or until bubbly and golden brown on top.
Notes
For extra flavor, consider adding some spices like paprika or Italian seasoning. You can substitute chicken with turkey or other meats if desired.
