Description

A quick and easy Shrimp Scampi Linguine loaded with flavor from garlic, butter, and lemon, perfect for weeknight dinners.


Ingredients

  • 8 oz linguine pasta
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup white wine
  • 1/4 cup chicken broth
  • 1/4 cup lemon juice
  • 1/4 cup unsalted butter
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink.
  4. Pour in the white wine, chicken broth, and lemon juice. Stir well and let simmer for a couple of minutes.
  5. Add the cooked linguine to the skillet, tossing to combine everything. Season with salt, pepper, and red pepper flakes, if desired.
  6. Remove from heat, sprinkle with fresh parsley, and serve immediately.

Notes

Make sure not to overcook the shrimp; they should be just pink. Use fresh lemon juice for the best flavor.
