Description

A hearty and comforting soup that combines the flavors of bacon, beef, and cheese, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 cup bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste
  • Optional toppings: additional cheese, bacon, green onions

Instructions

  1. In a skillet, cook the chopped bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the ground beef with diced onion and minced garlic. Drain excess fat.
  3. In a slow cooker, combine the cooked beef mixture, bacon, beef broth, diced tomatoes, and potatoes. Season with salt and pepper.
  4. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  5. Stir in the milk and cheddar cheese until melted and creamy.
  6. Serve hot with additional toppings if desired.

Notes

Use lean ground beef to reduce fat. Add more vegetables like carrots or bell peppers for extra nutrition. Adjust seasoning before serving.
