- 1 lb ground beef
- 1 cup bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup diced tomatoes
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- Optional toppings: additional cheese, bacon, green onions
Instructions
- In a skillet, cook the chopped bacon until crispy. Remove and set aside.
- In the same skillet, brown the ground beef with diced onion and minced garlic. Drain excess fat.
- In a slow cooker, combine the cooked beef mixture, bacon, beef broth, diced tomatoes, and potatoes. Season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
- Stir in the milk and cheddar cheese until melted and creamy.
- Serve hot with additional toppings if desired.
Notes
Use lean ground beef to reduce fat. Add more vegetables like carrots or bell peppers for extra nutrition. Adjust seasoning before serving.
