Ingredients

- 1 pound red beans, soaked overnight
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
- 4 cups cooked rice
- Chopped green onions for garnish
Instructions
- In a slow cooker, combine the soaked red beans, sliced sausage, onion, bell pepper, garlic, chicken broth, cayenne pepper, thyme, and bay leaves.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or until the beans are tender.
- Remove bay leaves before serving.
- Serve the beans over cooked rice and garnish with chopped green onions.
Notes
Make sure to soak the beans overnight for the best texture. For a vegetarian version, replace the smoked sausage with plant-based sausage.
