Description

A comforting and filling one-pot meal made with red beans, sausage, and spices, slow-cooked to perfection.


Ingredients

  • 1 pound red beans, soaked overnight
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 cups cooked rice
  • Chopped green onions for garnish

Instructions

  1. In a slow cooker, combine the soaked red beans, sliced sausage, onion, bell pepper, garlic, chicken broth, cayenne pepper, thyme, and bay leaves.
  2. Season with salt and pepper.
  3. Cover and cook on low for 6-8 hours or until the beans are tender.
  4. Remove bay leaves before serving.
  5. Serve the beans over cooked rice and garnish with chopped green onions.

Notes

Make sure to soak the beans overnight for the best texture. For a vegetarian version, replace the smoked sausage with plant-based sausage.
