Description

A hearty and filling soup made with tender steak, potatoes, and fresh vegetables, perfect for chilly days.


Ingredients

  • 1 lb steak (cubed)
  • 4 medium potatoes (diced)
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 3 cloves garlic (minced)
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the cubed steak and cook until browned on all sides. Remove the steak and set aside.
  3. In the same pot, add chopped onion, carrots, and garlic. Sauté until the onions are translucent.
  4. Return the steak to the pot along with the diced potatoes.
  5. Pour in the beef broth and add thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for about 30-40 minutes or until the potatoes are tender.
  7. Adjust seasoning as needed and serve warm.

Notes

For a thicker soup, mash some of the potatoes once they are tender. You can add more vegetables like celery or green beans for extra nutrition.
