A hearty and filling soup made with tender steak, potatoes, and fresh vegetables, perfect for chilly days.
Ingredients

- 1 lb steak (cubed)
- 4 medium potatoes (diced)
- 1 onion (chopped)
- 2 carrots (sliced)
- 3 cloves garlic (minced)
- 4 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the cubed steak and cook until browned on all sides. Remove the steak and set aside.
- In the same pot, add chopped onion, carrots, and garlic. Sauté until the onions are translucent.
- Return the steak to the pot along with the diced potatoes.
- Pour in the beef broth and add thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30-40 minutes or until the potatoes are tender.
- Adjust seasoning as needed and serve warm.
Notes
For a thicker soup, mash some of the potatoes once they are tender. You can add more vegetables like celery or green beans for extra nutrition.
