- 1 pound beef stew meat
- 4 cups beef broth
- 2 cups carrots, chopped
- 2 cups potatoes, diced
- 1 cup green beans, chopped
- 1 cup corn (fresh or frozen)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- Salt to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef stew meat and brown on all sides.
- Add the onions and garlic, cooking until the onions are translucent.
- Stir in the tomato paste, thyme, and black pepper.
- Pour in the beef broth and bring it to a boil.
- Add the carrots, potatoes, green beans, and corn.
- Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the beef is tender.
- Season with salt to taste before serving.
Notes
Make sure to brown the meat well for a richer flavor. For a thicker soup, add cornstarch mixed with cold water towards the end. Customize with your favorite vegetables.
