A beautiful and delicious cake featuring caramelized pineapple and a soft sponge base.

- 1 ripe fresh pineapple (sliced into rings)
- 1/2 cup unsalted butter (1 stick)
- 1 cup brown sugar (packed)
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup granulated sugar
- 3 large eggs (room temperature)
- 2 tsp vanilla extract
- 1/2 cup whole milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a round 9-inch cake pan.
- Melt the butter in the prepared pan over medium heat, then stir in the brown sugar until bubbly; remove from heat.
- Arrange the pineapple rings on top of the brown sugar mixture and place a cherry in the center of each ring.
- In a bowl, cream the softened butter and granulated sugar together until fluffy. Add the eggs one at a time along with the vanilla extract.
- In another bowl, whisk the flour and baking powder together. Gradually mix this into the wet ingredients, alternating with the milk, until the batter is smooth.
- Pour the batter over the pineapple arrangement and spread it evenly.
- Bake for 40-45 minutes or until a toothpick comes out clean. Allow the cake to cool slightly before inverting onto a plate.
Notes
For extra flavor, you can add crushed pecans or walnuts on top of the pineapple before pouring the batter. Use fresh pineapple for the best flavor.
